...but I agree that they do not have a UP certification yet. Not enough spicing in the meat. I had high hopes for a true UP pasty in the Loop, but that'll have to wait. Haven't tried the other varieties that they have yet. Also, they are a little on the small side. But if they nail the flavor profile, I wouldn't complain (too much).

I guess it's back to my pasties from the once-a-year January sale at St. Mark's church in Waukegan, IL.

Tried them recently but they don't have the UP down yet. There's are definitely Cornish, not like ours- kind of tasteless. Heard there is a new one opening in western suburbs of Chicago by real Yoopers.
